Today's Brekkie: !!! #Sunday #Brunch !!! French Omelet Keto Waffles Sausage Links To french-up your omelet separate your eggs. Impetus for an Omelet this morning is I just got an egg-separator and thought it was time to try it out! [#ProTip: set out your eggs at least an hour before cookjng to warm up, overnight is even better, room temperature eggs separate easier and cook better whether you're making an omelet, scambled, or over easy] Whip the whites light and fluffy, break yolks and gently fold into beaten whites, then pour into hot pan on medium heat, lifting edge with rubber spatula to allow raw egg mixture to flow underneath, repeat around skillet until most of the raw egg has cooked. Then slide pan under heated broiler (or in my case into convection/airfryer oven) to lightly brown top of Omelet. Sprinkle some grated cheese over Omelet and return to broiler until cheese is melted. Fold Omelet in half to serve. I browned my sausage links while prepping the eggs, and toasted my Keto Waffles (I rarely mention brands b'cuz none of them or farcebook are paying me, but I just found these Birchbender keto toaster waffles, just 2½ carbs per waffle). #TodaysBrekkie #SundayBrunch #FrenchOmelet #Omelet #Keto #Waffles #SausageLinks

Then in a hot pan (little wok) a little olive oil is heated then the prawns that have been tossed in my "taco seasoning" (chile powder, paprika, cumin, oregano, onion & garlic powder, etc) I flash sautéed the prawns, turned off the burner, hit them with a squeeze of fresh lime juice, and filled the waiting tortillas! 😋 YUM 😋 YUM 😋 #TonightsDinner # #camarons #shrimp #prawns #rice #beans
Dolmades and Avgolemono! ... Stuffed #GrapeLeaves with Egg & Lemon sauce ... OK . . . I don't make my own dolmades from scratch! I cheat by opening a can of pre-filled, pre-rolled, pre-steamed grape leaves!!! Back in Denver I used to help a Turkish-Lebanese friend stuff and roll dolmas (Turkish for Dolmades) a couple times a year for big dinner parties she'd throw. We also made big batches of Hummus, Baba Ghanouj, and Lamb Kibbeh. If'n you really want to roll your own dolmas or dolmades you'll find plenty of peeps on youtube & tiktok with vids. So now that I've come clean on the origins of my dolmades, I will tell you about making Avgolemono! It's a very easy sauce, quite similar Hollandaise but more lemony 🍋 Start with a little broth, I like vegetable broth but a light/weak chicken stock works too. Now if you did stuff, roll, steam your own dolmades, a cup of the leftover liquid from cooking your dolmades is a good broth. Needing only a small amount of Avgolemono I used just ½cup of vegetable broth, the zest and juice of one lemon, a little water and corn starch (like a TBS water and tsp corn starch mixed) and one egg. Unlike Hollandaise sauce you use the whole egg, well beaten. Heat broth and add lemon zest. Juice lemon and stir in corn starch mixture. Add lemon juice mixture to simmering broth, stirring well, then turn off heat, add beaten egg and stir until smooth. Warm Dolmades (I warm canned dolmades slowly on low power in microwave) and serve with Avgolemono! 😋 yum 😋 yum 😋 #TonightsDinner #Dolmades #Dolmas #Avgolemono
Tzatziki Sauce, condiment, dressing, dip ... Greek sauce made from thick yogurt (yeah! #GreekYogurt!) and finely julienned cucumbers, scallions, minced garlic, fresh mint leaves, fresh lemon zest & juice, dill, and a little olive oil. Tzatziki isn't just for topping Gyros or Spanokapita, it make a cool crisp #Summer dip for crackers, chips, pita wedges, or fresh veggies, and can be thinned a little to use as #SaladDressing! #TonightsDinner #Tzatziki Pic#1 Gather all the ingredients - yogurt, cucumbers, scallions, garlic, fresh mint leaves, lemon, dill, olive oil. Pic#2 Grate or julienne cucumber. I like to julienne and use half a large English cucumber. You can use one regular cuc, just peel it in stripes removing about half of peel, cut in half length ways, and scoop out seeds. With the English cucumber the peel is thinner and seeds much fewer so I just julienne it. After grating or julienning, spread cucumber out over a dish towel and fold over and let sit while you prep yogurt to drain moisture. Just before adding to yogurt roll up tightly and squeeze out as much moisture as possible. Pic#3 Prep yogurt (yes use thick GreekYogurt such as Fage - pronounced Fah-yeah) add thinly sliced scallions, minced garlic, choppes fresh mint leaves, fresh lemon zest, juice of half a lemon (more if you like), a goodly shake of dillweed or chopped fresh dill in season, a little salt and fresh ground black pepper to taste. Blend yogurt well, then fold in cucumber. Pic#4 Top Tzatziki with a dribble of olive oil and serve! If prepping ahead, cover and keep refrigerated until mealtime and serve very cold.
Tonight's Dinner: Cashew Chicken with Snow Peas on Shirataki Lo Mein. And Mandu (Korean Pot Stickers). Dinner prep began mid-afternoon with cutting up #Chicken thighs into 1" cubes and then #velveting (Asian method of tenderizing using corn or potato starch) and marinating for a couple hours in mix of soy sauce (light & dark), rice vinegar, Shaohsing wine. While chicken marinated, Shirataki noodles (an almost zero-carb noodle made from #Konjac yams) drained and were patted dry. Onion was julienned, carrots sliced, and tips removed from #SnowPeas. One egg scrambled to go in #LoMein. When ready to begin cooking I heated wok and a small skillet for the #Mandu. Begin with adding some Seasame oil and garlic chili oil to pans, then position Mandu on sides in small and cover, and add Shirataki to hot wok. Stir-fry noodles and add carrots and onions, and continue stirring occasionally. Turn Mandu to sit on their bottoms and continue browning while covered. After carrots have softened and onions begin to brown, clear center of wok and add egg and scramble, then stir in noodles, mix well and place in serving bowl. Return #wok to heat and get very hot, add another splash of oils. Turn Mandu onto last side to finish browning. While wok reheats, drain chicken saving marinade, then add to hot wok. Stir-fry chicken vigorously so it doesn't stick and scorch. When chicken is cooked through and outside begins to crisp, mix in #Cashews, then the saved marinade, stir well, top with Snow Peas cover and lower heat to medium. Let chicken and peas simmer and steam while plating Mandu, then serve #CashewChicken over Lo Mein. I had four large-ish boneless chicken thighs left from a 10-pack that I opened this afternoon to start another culinary project that I'll share in a couple days. Yes the 4 thighs made a LOT of Cashew Chicken and I'll portion and freeze the extra. #TonightsDinner
April's Food Co-oP Delivery: Oh my, this was the really BIG "monthly" Food Co-oP drop-off, typically large with meat, fish, and produce. And it was H . U . G . E !!! Today's Brekkie: 🧀Cheesy Grits & Shrimps!🦐 I'd planned on having #Grits for Brekkie this morning instead of hashbrowns, but making a Louis Ceasar Salad for dinner last night I noticed I had more shrimps than expected and needed to use them up soon ... and Brekkie was the next opportunity! Now Shrimp & Grits is a traditional breakfast dish in the #Lowcountry of the southern coastal region of the United State, though many others consider it more of a lunch or supper dish. It's fairly simple to prepare once you've got your grits cooked. Yes, if you must, you can use "quick" (5 minute) grits from that Quaker preacher guy, but none of that "instant" stuff! "Real" grits take 25-30 minutes to cook like other whole grains - rice, barley, oats. While grits are steeping, cook up a slice of bacon per serving, save the rendered grease in skillet, dice the cooked bacon and add to grits. In bacon grease saute some minced garlic, sliced scallions and diced bell pepper (red or orange looks best, but green is good too, and if you want a little kick add or substitute a jalapeño!) Add shrimps to veggies and sauté quickly, sprinkle with tsp flour and cook into a roux, add a little (⅓ cup/serving) chicken or fish or vegetable stock to pan and stir until sauce sets up. Stir ⅓cup/serving cubed or grated Cheddar cheese into cooked grits, and place serving of Cheesy Grits in shallow dinner bowl and smother with Shrimps and sauce. For Brekkie or Brunch I like to poach an egg in the Shrimp sauce to top off my Grits & Shrimps. And I had a slice of my sprouted grains Keto Bread smeared with fresh Avocado 🥑. #TodaysBrekkie #GritsAndShrimp #CheesyGrits #bacon #AvocadoToast
