Tonight's Dinner: Southwest Chicken Soup Pimento Cheese & Chips Still under the weather ... a friend had made a large pot of chicken stock yesterday and dropped off a quart to me. This morning I diced up a standard mire poix - onions, carrots, celery - and some red bell pepper. After sautéing the veggies I poured in the chicken stock, adjusted seasonings, and left it to simmer on low all afternoon. This evening I turned up the heat on the soup while a package of my Southwest seasoned chicken parts (Pollo Mexicano originally planned to be another round of Enchiladas) in the microwave, cut it to size, and added it to the soup. #TonightsDinner #ChickenSoup ala Mexicano #PimentoCheese #TortillaChips
