Tonight's Dinner: Roasted Tomatillo Gazpacho with Caesar Camarón Ensalada. Yesterday my weekly food co-op box again was loaded with seasonal produce just RIPE for making Gazpacho ... but in a twist, there were a half dozen Tomatillos. Yes those cute little green tomato sorta thingies tha gift wrapped in their own special, and #natural, tissue paper! Those that have been following the recent Gazpacho postings will notice this Roasted Tomatillo model is not as bright red as my normal Gazpacho as the added green of the tomatillos makes it more of a brownish or brick red color. #TonightsDinner
