Tonight's Dinner: Asian style Smoked Pork Tenderloin Stir-fried Cauliflower Rice Fresh Snap Peas My gas grill has been out of commission this Spring, had a leak somewhere between tank and burners ... 1st noticed a couple months ago when burner didn't get hot enough to smolder the wood chips in their little smoke box and had to pan sear a pork belly. Then came the long drawn out process of soaping down the connectors, hoses, pressure regulator ... but nary a bubble when I turned on the gas. Tried reseating the threaded connectors at each end of the hose at tank and the manifold, fresh wraps of Teflon tape ... and this time when I turned on the gas, I COULD HEAR IT AND SMELL👃IT! Coming off the factory crimped hose connector at the regulator! Amazon came through with a 24inch braided gas line with 2nd day prime delivery! Got the new line installed yesterday and wanted to test it before the 4th so I pulled a package of Pork Tenderloin out to thaw. Turned out Hormel stuck 2 Tenderloins in the package! Because the package didn't taper I thought it was just a small whole loin. I wanted to smoke it some (to test the smoke box) before roasting with a slather of Cilantro Lime Hosin sauce. The new gas line works great! The wood chips smoked the Tenderloins for an hour before I turned up the heat to seal the meat and then basted it with the Hosin sauce. The Stir-fried Cauliflower Rice is made pretty much like regular Fried-Rice but using minced cauliflower. I had red and green bell peppers, onion, mushrooms, and added a couple beaten eggs at the end. All Stir-fried in a hot wok until lowering heat before scrambling the eggs. Being quite hot today - Yes! #Summer has finely arrived in the Sierras!
