This home made sausage is one of the highlights of our tour. Juventino and his family created this recipe inspired by the famous green chorizo from Toluca City. They use several ingredients such as pork meat, spinach, Chile poblano, cilantro, capers, peanuts, pumpkin seeds, almonds and sometimes even cashews and pine nuts. A lot of stalls sell green chorizo but it usually looks bright green because instead of using green veggies like Juventino they just put food coloring and the taste is horrible.
