Nixtamal is our culture’s heart and soul, it’s how we make our tortillas and without tortillas we wouldn’t have Mexican food. Here at this “molino de nixtamal” or nixtamal grinder Polo makes sure every tortilla is perfect and delicious. Modern life took a toll in our traditional food and now a lot of the tortillerías use flour sometimes made with GMO corn to produce their tortillas. Here, they still follow the traditional process of cleaning the corn, cooking it with limestone and then grinding the cooked kernels to make a perfect masa that will eventually become a tortilla, but also a sope a tlacoyo or a gordita.
