2 Summertime Recipes (from days gone by)
Since it's summer time and full harvest is coming right along I thought I would share 2 of Mom's favorite recipes for summer time. Just a little change from the normal veggies.of summer, but you too may remember them from days gone by. Mom's version of German Potato Salad - 5 lbs potatoes peeled, sliced and boiled until tender then drained, set aside to cool1 lb bacon - fried crisp and broken into peices, reserve 1/4 cup of the grease.1 bunch green onions chopped (about 6 or 7)6 eggs boiled, peeled and chopped or sliced (as desired)1/4 C. Cider vinegar (yes, it makes a difference)1/4 C. Sugar (to taste, more or less as you like)1 1/2 C. water Place potatoes, green onions, eggs and bacon peices in large bowl. In frying pan heat grease, add sugar and vinegar, stirring, slowly add water bringing to a simmer. when sugar is dissolved remove from heat. Pour over potatoes in bowl. Gently mix being careful not to break up potatoes. Add salt and pepper to taste. Serve warm. Another summer time favorite was her "Wilted Spinach Salad" which is also best served warm. Large bunch of spinach leaves - rinsed well ( a GOOD SIZE bowl will do)5 - 6 slices of cooked bacon crumbled (remove from frying pan and reserve grease in pan)1 - 15 oz can bean spouts (drained)1 small can Water chestnuts (Sliced - drained)3 or 4 green onions sliced/chopped3 TBSP Sugar3 TBSP Cider Vinegar1/2 C water3 - 4 boiled eggs, peeled and chopped (optional) Mix Spinach, sprouts, chestnuts and onions in a large bowl. In frying pan begin to heat bacon grease, add sugar and vinegar, stirring in water. Bring to a simmer, making sure sugar is dissolved. Quickly pour over spinach and toss to coat. These are great alone or paired with something else for dinner!
