Mini frittatas are a great new idea they can be prepared with eggs milk, parmesan parsley, thinly sliced ham salt and pepper to taste. Just spray your pan with your favorite nonstick vegetable spray. Then mix all of these simple ingredients together in a bowl. Place your ingredients into your mini muffin pan then bake your mixture until your eggs puff up.

Then scoop into your puff pastry the amount you wish to desire with added cheese on top. Bake these tiny but scrumptious morsels until the corners are toasted. And the cheese is nice and melted.
