Fattoush

Fattoush

Here is my first Lebanese dish I made a while ago. It is really delicious and can be served as a main course or as a side dish. I tried this for the first time a few months ago at my in-laws, gathered all the right information and made it right away.

Fattoush is a very popular Lebanese dish, it means "crumbled" in Arabic. The mixture of vinegar and garlic gives the salad a zesty taste, while the lettuce and tomatoes give the amazing and inviting color. Fattoush is a very healthy, vegetarian dish!

Ingredients:

1 head organic romaine lettuce, torn into bite pieces

1 medium-large organic cucumber, diced

2 large organic tomatoes, diced

1/4 cup organic fresh leaf parsley, chopped

1/4 cup organic fresh mint, chopped

1 organic green bell pepper, seeded and chopped

3-4 organic radishes, thinly sliced

2 gloves garlic, organic

salt to taste ( I only use Sea Salt )

vinegar

olive oil

2 pieces of pita bread ( you can use wheat pita bread )

Start by smashing together garlic and salt into a paste to season the dressing. I use the mortar and pestle, but you can do this with the side of a knife or a spoon. Mix it with olive oil and vinegar and put aside.

Cut the pita bread into strips for toasting. Make sure they don't get too brown. Crumble the pita bread and put aside until you mix the greens and vegetables.

Wash and dry all of the greens and vegetables before starting the salad.

Toss the vegetables and greens together, then toss with about half of the dressing, add the pita chips and toss again, adding a bit more of the dressing.

Let the salad sit for a few minutes, or longer, then arrange on individual plates and sprinkle each serving with a bit more dressing if desired.

Enjoy!
