Pumpkin Nut Bread - Country Recipes

1-cup pumpkin (cup of mashed sweet potatoes substitution)
1 ½ tsp. pumpkin pie spice - (substitute ¾ tsp. cinnamon, ½ tsp. ginger, ½ nutmeg and dash ground cloves)
1/3 cup water
1 ½-cup flour
1 tsp. baking soda
½ cup chopped nuts (pecans or walnuts work well)
Preheat oven to 350 degrees
Mix all dry ingredients in a bowl, mix well.
Beat 2 eggs and add to dry mixture along with oil.
Add in all wet ingredients: water and pumpkin
Pour into well-greased loaf pan and bake for 1- 1 ¼ hours or until knife inserted in center comes out clean. Allow the bread to cool within the pan and then gently remove.
