Home-made Salsa

Just recently, I was watching a foodie program about selecting and preparing fish for fish tacos, when I saw for the first time the secret of a good home-made salsa. It is starting the base of the salsa with lime. The lime helps to smooth the flavor of heat and sweet, plus amplifying the goodness of fresh ingredients. So after years of experimentation, with this secret, I was able to make a great salsa in a few minutes without needing to add salt or other additives.

Home-made salsa

1 1/2 Tbl. of lime
1/4 finely chopped onion
2 diced tomatoes
chopped jalapenos (to taste)
1 tsp. onion powder
1 tsp. dried parsley
1 tsp. dried tarragon 

Put lime in the bottom of the bowl, then add onions. Stir slightly until onions are coated, add tomatoes. After tomatoes are coated, add jalapenos to taste. If you like mild taste, add only a very small portion. Now add onion powder, parsley, and tarragon. You can use cilantro instead of parsley and tarrogon.

And there you have my simple recipe. It is quick to make and adds flavor to your favorite dishes. And even better, no added salt. This will probably last no more than 7 days in the refrigerator.
