Baked Banana Pancake

Adding this delicious Baked Banana Pancake recipe so you have enough time to gather the ingredients for your Sunday morning breakfast. We have loved this recipe for years. Shared by my sister-in-law many moons ago (you should see my tattered recipe card :)

Don't have bananas on hand? Add available variety of fruit/s; fresh, frozen, and or canned will work.

Baked Banana Pancake ...to-die-for!

  • 1 cup whole wheat flour (I've used unbleached flour too)
  • 1/2 cup non-fat dry milk
  • 1/2 teaspoon salt [optional]
  • 3 eggs, separated
  • 1 tablespoon oil
  • Honey
  • 1 1/2 cups water
  • 3 extra ripe bananas or fruit you have on hand
  • Nutmeg and cinnamon; to taste

In a large bowl combine flour, dry milk, and salt; toss. In a small bowl add the 3 egg yolks, oil, 2 teaspoons honey, and water; beat to mix. Stir wet ingredients into dry making a smooth batter. With your blender or by hand beat the 3 egg whites until stiff peaks; gently fold into batter. Lightly grease shallow baking dish, making sure to coat bottom and sides evenly. Pour in 1/2 of the batter mixture, slice bananas or other fruit evenly over batter, drizzle 2-3 tablespoons honey over mixture, then sprinkle on nutmeg and cinnamon. Pour remaining batter on top. Bake in a preheated 325 degree oven for 15 minutes and then turn oven to 375 degrees and continue baking for 20 minutes or until golden brown.

Bananas are high in potassium, vitamin B and C, and by nature's design they are perfectly 'wrapped'. Easily add them to any meal-on-the-go! You will love sharing this recipe because:
