Left over turkey
Chicken Lipton noodle soup mix
Water
Uncooked rice
Optional – chopped vegetables of your choice (fresh or frozen)
Method:
Start with either left over sliced turkey cut up in small chucks or boil the carcass of a turkey until you get enough turkey to yield about 4 cups of chopped turkey .To boil the carcass cover with water and bring to a boil, simmer on low heat until meat falls off the bones, , drain off the resulting broth and let it cool and skim off any fat, set aside ) Sort through the boiled turkey and throw out skin and bones,
Put the turkey in a pot to boil with a cup of rice, broth, chicken noodle soup mix and 4 cups of water. ( the only reason why I use Lipton’s chicken noodle soup mix is because I like the flavor, you might find another soup mix that you like better or you might prefer all broth and to add your own seasonings .) Let this come to a boil and simmer for 30 minutes, add the noodles in the last ten minutes .(I add them last because they cook up so quickly This makes a really thick soup, more like a stew I think. My husband likes it this way. (Note: I first had this soup when I spent my first Christmas with my husband at his mother’s home He declared that it was made from an old family recipe. I had a good chuckle when I was looking in her cupboards a couple of years later and discovered her secret ingredient was “No Name Chicken Noodle Soup Mix.” )
